Featured Recipe - Cold Spaghetti Salad
This recipe is from my second cookbook, Unforgettable Appetizers and has certainly been a lifesaver over the years. My sister, Debra first introduced me to this delicious salad a few years ago. It’s so economical to make and only has a few ingredients. Sometimes, homemade salads can get quite expensive to make, but not this one. It's a budget stretcher and certainly a show stopper on any table.
6 ounces spaghetti, uncooked
Garlic powder to taste
4 to 6 ounces basil Pesto sauce, more to taste, divided
2 medium cucumbers, peeled and chopped
2 to 3 medium red tomatoes, chopped
Seasoned Salt and ground black pepper to taste
according to package directions; drain and run cool water on spaghetti in a colander. Once cooled completely, drain well.
Place spaghetti in a large bowl or pan; season spaghetti well with garlic powder. Add about 4 ounces of basil Pesto sauce to cold spaghetti; mix well. Refrigerate. One hour before serving, add cucumbers and tomatoes; add seasoned salt and black pepper as needed. Mix well making sure all ingredients is covered with the pesto sauce. If more basil Pesto sauce is needed, add according to taste. Mix well. Serve cold. Yield: 6 to 8 servings. Enjoy.

A few years ago, I had the unique opportunity to interview Gaines for the 2007 Black History Maker on soul-food advisor.com. Gaines is also a cookbook author and the coordinator and the creative mind behind The annual Martin
Luther King Soul Food Cook Off Competition which takes place every January in Muskogee, Oklahoma.
Momma C’s products are also in the Southern Food and Beverage Museum in New Orleans along with Griffins food and other products in Oklahoma. And Gaines also sit on the Board at the 5 star Museum.
