GAME NACHOS - Super Bowl Recipes
4 - (7- to 8-inch) flour tortillas
1/2 cup shredded Monterey Jack cheese (2 ounces)
1/2 cup shredded cheddar cheese (2 ounces)
1/4 cup salsa or taco sauce, hot or mild
Dairy sour cream (optional)
Preheat the oven to 450 degrees. Stack tortillas and cut into 4 wedges. On a 12-inch pizza pan arrange tortillas in a single layer, overlapping slightly if necessary. Bake in the 450 degree F oven for 7 to 9 minutes or just until brown.
Sprinkle cheeses over tortillas on pan. Return to oven about 2 minutes more or until cheeses melt. Drizzle with salsa or taco sauce. Dollop with sour cream, if desired. Makes 3 to 4 snack servings.
CRAB FOOTBALL SPREAD - Super Bowl Recipes
1 package (8 ounce) cream cheese, softened
2 cups (8 ounce) shredded cheddar cheese
1 cup (4 ounces) shredded provolone cheese
1 cup canned crabmeat
1 cup (8 ounce) small curb cottage cheese
2 teaspoons seafood seasoning
2 teaspoons Worcestershire sauce
1 teaspoon prepared mustard
Pretzel sticks
Assorted crackers and/or fresh vegetables
In a large bowl, beat cream cheese until smooth. Add cheddar cheese, provolone cheese, crab, cottage cheese, seafood seasoning, Worcestershire sauce and mustard; mix well. Cover and refrigerate overnight.
Form mixture into a football shape. Arrange pretzels over top for laces. Serve with crackers and/or vegetables. Yield: 1 cheese ball.
SUPER BOWL PIZZA SPREAD - Super Bowl Recipes
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
1 cup mayonnaise, light or regular
1 cup chopped pepperoni
1 can (4 ounce) mushroom stems and pieces, drained and chopped
½ cup chopped onion
½ cup chopped green peppers
1 can (6 ounce) ripe olives, drained and chopped
1 cup chopped stuffed olives
Crackers or breadsticks
In a large bowl, combine all ingredients except crackers or breadsticks. Bake in a 11-inch by 7-inch 2 inch baking dish at 350 degrees for 25 to 30 minutes or until edges are bubbly and lightly browned. Serve with crackers. Yield: 6 cups.
SUPER BOWL BUFFALO WINGS - Super Bowl Recipes
16 chicken wings (about 3 pounds)
1-1/2 cups bottled chili sauce
3 to 4 tablespoons bottled hot pepper sauce
Cut off and discard wing tips. Cut each wing into 2 sections. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 10 minutes or until chicken is browned, turning once. Transfer chicken to a 3-1/2- or 4-quart crockery cooker. Combine chili sauce and hot pepper sauce; pour over chicken wings.
Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting or 2 to 2 - 1/2 hours. Serve chicken wings with Blue Cheese Dip or ranch salad dressing. Yield: 32 appetizers.
BLUE CHEESE DIP - Super Bowl Recipes
1 - 8-ounce carton dairy sour cream
1/2 cup mayonnaise or salad dressing
1/2 cup crumbled blue cheese (2 ounces)
1 clove garlic, minced
1 tablespoon white wine vinegar or white vinegar
Prepare in blender. Cover and blend until smooth. Store dip, covered, in the refrigerator for up to 2 weeks. To serve, transfer dip to a serving bowl; top dip with additional crumbled blue cheese, if desired.
SUPER SALSA DIP WITH VEGGIES AND CHIPS - Super Bowl Recipes
1 (8-ounce) package cream cheese, softened
2 (8-ounce) containers favorite flavor dairy sour cream dip
1 cup salsa, hot or mild
Assorted vegetable dippers
Tortilla chips
In a bowl mix cream cheese until smooth. Add about half the dip and stir until smooth. Add remaining dip then add salsa and stir until smooth. Cover and chill at least 2 hours. Spoon dip mixture into a serving bowl. Serve with vegetable dippers and tortilla chips. Yield: 12 servings.
AUTHENTIC BUFFALO WINGS - Super Bowl Recipe
4 pounds of chicken wings
Salt & freshly ground pepper
Peanut oil
1/4 cup of butter, melted
2-5 tablespoons of hot sauce
1-2 tablespoons of vinegar
Celery sticks
Blue cheese or Ranch dressing
Remove and discard chicken wing tips. Cut wings in half at joints. Sprinkle with salt and pepper. Fry 8 wings at a time in deep hot peanut oil 375 degrees for 10 minutes or until golden brown, turning occasionally. Drain on paper towels.
Combine butter, hot sauce and vinegar; stir well. Pour over wings, tossing to coat. Serve warm with celery sticks and blue cheese or Ranch dressing. Yield: 6 appetizers.
SOUTHERN BUFFALO WINGS - Super Bowl Recipes
2-3 pounds of chicken wings
1/2 cup of hot sauce
1/2 cup of butter
1/2 cup of lemon juice
Deep fry split wings at 400ºF. for about 12 minutes or until crispy; drain. Combine hot sauce, butter, and lemon juice; heat until blended. Coat wings with sauce; soak overnight, if possible, in refrigerator. Bake in oven at 325ºF. until heated through.
SPICY ONION DIP - Super Bowl Recipes
1-1/2 cups chopped sweet onion
2 tablespoons margarine or butter
1 - (8-ounce) carton dairy sour cream
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon ground red pepper
4 teaspoons snipped fresh chives
Milk (optional)
Dippers
In a medium skillet cook onion in margarine or butter about 5 minutes or until tender. Cool. In a blender or food processor combine cooked onion, sour cream, salt, black pepper, and red pepper. Cover and blend or process until nearly smooth.
Transfer to small bowl. Stir in chives. Cover and chill 1 to 24 hours. Before serving, stir in additional milk, a teaspoon at a time, if necessary, to make of dipping consistency. Serve with a variety of dippers, such as chips and sliced raw vegetables. Makes 1-1/2 cups.
POTATO BACON SALAD - Super Bowl Recipes
2 pounds red potatoes, cooked and cut into chunks
1/2 cup green pepper, chopped
1/2 red onion. Sliced thinly
6 slices bacon, cooked and crumbled
1/3 cup mayonnaise
1/3 cup Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons parsley
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
In a large bowl, combine potatoes, green pepper, red onion, and bacon; set aside. In a small bowl, blend mayonnaise, mustard, vinegar, parsley, garlic powder, and oregano. Pour over potato mixture, tossing to coat well. Cover and chill at least 2 hours. Yield: 5 to 6 servings.
CHEDDAR BROCCOLI SALAD - Super Bowl Recipes
6 cups fresh broccoli florets
1 ½ cups shredded cheddar cheese
1/3 cup chopped onion
1 ½ cups mayonnaise
¾ cup sugar
3 tablespoons red wine vinegar or cider vinegar
12 bacon strips, cooked and crumbled.
In a large bowl, combine broccoli, cheese and onion. Add mayonnaise, sugar and vinegar; pour over broccoli mixture and toss to coat. Refrigerate for at least 4 hours. Just before serving, stir in the bacon. Yield: 8 servings.
STUFFED MUSHROOMS WITH CHEESE - Super Bowl Recipes
3 bacon strips, uncooked
1/2 cup grated mozzarella
2 tablespoons sour cream
1/2 cup bread crumbs
1 tablespoon dry mustard
1/2 tablespoon ground black pepper
12 large mushroom caps, stalks removed
1 tablespoon sweet paprika
Grill bacon until crisp, chop coarsely. Combine with cheese, sour cream, bread crumbs, mustard, and pepper. Spoon into mushroom caps, sprinkle each with paprika. Cook in 325 degrees oven until cheese melts.
TENNESSEE BREAD PUDDING
2 cups hot water
1 ½ cups sugar
1 (12-ounce) can evaporated milk
4 large eggs
1 cup flaked coconut
½ cup crushed pineapple, drained
½ cup raisins
1/3 cup butter or margarine, melted
1 teaspoon vanilla extract
1 teaspoon ground nutmeg
9 slices white bread with crust, cut into ½-inch cubes
Combine water and sugar in a bowl, stirring until sugar dissolves. Add milk and eggs, stirring with a wire whisk until blended. Stir in coconut, pineapple, raisins, butter, vanilla, and nutmeg. Add bread cubes; let mixture stand 20 to 30 minutes, stirring occasionally.
Pour into a greased 9 X 13 inch pan. Bake at 350 degrees for 45 minutes or until a knife inserted in center comes out clean. Serve hot. Yield: 12 servings.
PEANUT BUTTER CHOCOLATE LAYER BARS
20 peanut butter sandwich cookies, finely crushed
3 tablespoons butter, melted
1 1/4 cup lightly salted dry roasted peanuts, chopped
1 cup chocolate chips
1 cup coconut
1 can of sweetened condensed milk
Preheat oven to 350 degrees. In a small bowl, combine cookie crumbs and butter; press mixture into the bottom of a greased 13x9 baking pan. Layer peanuts, chocolate chips, and coconut over crumb mixture.
Drizzle sweetened condensed milk evenly over the top. Bake for 20 to 25 minutes or until coconut is golden brown. Cool on wire rack and cut into squares.
