    <description>&lt;P&gt;I remember my mother making sweet tea when I was a youngster growing up in Halls, TN.  Southerners love sweet tea, its like a tradition in many households.  We mostly had sweet tea with Sunday dinner when my grandmother made her delicious butter pound cake for dessert.  This was also my first experiment using lemon juice.   My old-fashioned sweet tea recipe was recently featured in the food section of the Jackson Sun.

    <description>2 pounds of boneless and skinless chicken (breasts or thighs) &lt;br&gt;
Season chicken with season salt, garlic salt, black pepper&lt;br&gt;
2 cans cream of mushroom soup&lt;br&gt;
1/2 onion chopped&lt;br&gt;
1/2 green pepper, chopped  &lt;br&gt;
1.5 cup of chopped mushrooms&lt;br&gt;
1 Tablespoon butter, margarine or cooking spray  &lt;br&gt;
1.5 cans milk&lt;br&gt;
Parsley, optional&lt;br&gt;

&lt;P&gt;Season and bake chicken in a 350 degree oven for 30-45 minutes or until done;  set aside. In saucepan, coated with butter or cooking spray,  sautee onions, green pepper and mushrooms until soft; set aside.  

&lt;P&gt;In large skillet over medium heat,  mix soup with 1.5 cans of milk. Heat until boiling; remove from heat. Add chicken to skillet and sauteed vegetables. Heat on low until chicken and vegetables are hot.  Sprinkle parsley on top if desired.  Serve with rice.

    <description>&lt;P&gt;For Black History Month, try this tasty rice and pinto beans recipe.

&lt;P&gt;1 pound dried pinto beans, soaked overnight &lt;br&gt;
6 cups water &lt;br&gt;
1 smoked turkey wing &lt;br&gt;
1 onion, chopped &lt;br&gt;
2 cloves garlic, minced &lt;br&gt;
1 1/2 teaspoons season salt &lt;br&gt;
1 teaspoon black pepper&lt;br&gt;
1 lb smoked sausage, sliced &lt;br&gt;
1 -  16 oz can tomatoes &lt;br&gt;
1 teaspoon red hot pepper, optional &lt;br&gt;
boiled white rice

&lt;P&gt;Combine soaked and drained beans with water, turkey wing, onion, and garlic in a large Dutch oven; bring to boil. Cover, reduce heat to medium, and cook 45 minutes. Add remaining ingredients. Cover, reduce heat, and simmer 1 hour, stirring occasionally. 

&lt;P&gt;Remove turkey wing and shred meat from bone with a fork. Return meat to bean mixture.  Serve over hot cooked rice.  Serves 5 to 6.</description>

    <title>&lt;B&gt;Dr. Martin Luther King Day Recipe 1-13-08 &lt;/b&gt;</title>

    <description>&lt;P&gt;In honor of Dr. King, I want to share a recipe with you from my new cookbook Soul Food Lovers.  Its similar to a one-pot meal served during slavery.  Its absolutely delicious and only takes a few minutes to put together.  

&lt;P&gt;&lt;B&gt;Macaroni &amp; Cheese Sausage Casserole &lt;/b&gt;&lt;br&gt;
1 (12 oz pkg) elbow macaroni, cooked &lt;br&gt;
1 (16 oz) cheddar cheese, shredded &lt;br&gt;
1 (15 oz) can mixed vegetables, drained &lt;br&gt;
1 (10  oz) can cream of mushroom soup &lt;br&gt;
4 smoked sausages, sliced thin &lt;br&gt;
1 soup can of water &lt;br&gt;
1 tsp. black pepper &lt;br&gt;
1 tsp. parsley

&lt;P&gt;Preheat oven to 350 degrees. Cook macaroni according to directions. Drain. In a large bowl, combine macaroni, half of cheese, mixed vegetables, mushroom soup, water, and sausage. Mix well. Transfer to a 9 x 13 buttered dish. Sprinkle with remaining cheese, black pepper and parsley. Cover and bake for 20 to 25 minutes. Yield: 6 to 8 servings.

    <title>&lt;b&gt;Forgotten Beef Stew  1-9-08&lt;br&gt;</title>

    <description>&lt;P&gt;This recipe is so simple and can be put together in less than 5 minutes.  A hearty meal without all the work.  Serve over cooked rice.  Your family will love it!

2 pounds stew meat &lt;br&gt;
1 can cream of mushroom or chicken soup &lt;br&gt;
1 envelope dry onion soup mix &lt;br&gt;
1 small onion, chopped &lt;br&gt;
1 can mushrooms with liquid &lt;br&gt;
 cup water &lt;br?
Dash of season and pepper to taste

&lt;P&gt;Put all ingredients in crockpot and cook all day at LOW setting.  Serve over cooked rice.

    <title>&lt;B&gt;Bake it Off!  12-30-07 &lt;/b&gt;</title>

    <description>I thought about getting a group of friends together after the holidays for a Bake It Off Party.  The idea is for everyone to bake a low fat or reduced fat dessert to pass.   Sort of like a pot-luck.   This will work with just about any type of dessert but is probably best with desserts made with butter, margarine, sugar,  cool whip, sour cream, instant pudding mix, cream cheese, eggs, evaporated milk, and sweet milk.  Why?  Simply because these ingredients can be easily replaced with the low fat or reduced-fat version.  

&lt;P&gt; You could also share a little history with the group about the dessert along with nutritional information, how you put the dessert together,  a copy of the recipe, and ingredient variations.   

&lt;P&gt;Since desserts are basically here to stay, why not enjoy them in a delicious and low fat way.  A great way to bake-off some calories and have fun at the same time.   Ill let you know how it turns out.

    <title>&lt;b&gt;Big Mamas Sweet Potato Pie  12-20-07 &lt;/b&gt;</title>

    <description>Big Mama used to make this sweet potato pie quite often and the smells of cinnamon and nutmeg was apparent throughout our house. I have eaten many sweet potato pies, but this one is truly the very best I've ever had. Make sure you dont leave out the grated orange peel. It makes the pie deliciously different. Try it! 

4 large sweet potatoes &lt;br&gt;
3 eggs, slightly beaten&lt;br&gt;
2 cups granulated sugar&lt;br&gt;
1/2 cup of brown sugar&lt;br&gt;
1 stick of butter or margarine&lt;br&gt;
1 cup of evaporated milk&lt;br&gt;
1 1/2 tablespoons of cinnamon&lt;br&gt;
1 1/2 tablespoons of nutmeg&lt;br&gt;
1 1/2 tablespoons of finely grated orange peel (don't leave out)&lt;br&gt;
1 teaspoon vanilla extract&lt;br&gt;
1 unbaked regular pie crust 




&lt;P&gt;Preheat oven to 375 degrees. Clean and rinse sweet potatoes. Place into deep cooking pot and boil until tender. Drain and remove skin. Place mashed potatoes in large mixing bowl. Add eggs and butter. Blend for 2 minutes with electric mixer. Add granulated sugar, brown sugar, and milk. Continue beating; add cinnamon, nutmeg, orange peel, and vanilla. Blend well. 

&lt;P&gt;Prick bottom and sides of thawed crust with fork; sprinkle lightly with granulated sugar, about 1 teaspoon. Place pie crust in over for 5 minutes or until crust rises or is lightly browned, let cool. Pour pie mixture into pie crust and bake for 35 to 40 minutes or until done. Cool for 30 minutes, then refrigerate. Yield: 6 to 8 servings

    <description>Theres no big secret to making the perfect pie just a few tips to remember: 

&lt;P&gt;--Pie crust will be better and easier to make if all ingredients are cool.

&lt;P&gt;--The lower crust should be placed in the pan so that it covers the surface smoothly.  Air pockets beneath the surface will push the crust out of shape while baking.

&lt;P&gt;--To keep juices in the pie, fold the top crust over the lower crust before crimping.  

&lt;P&gt;--When making a custard pie,  bake at high temperature for about 10 minutes to prevent a soggy crust.  Then finish baking at a low temperature.

&lt;P&gt;--When making a cream pie, sprinkle crust with powdered sugar to prevent it from becoming soggy.

&lt;P&gt;Follow these easy tips and youll be on your way to making the perfect pie.

    <description>Have you ever started frosting a cake and the frosting just roll along with the spatula instead of staying on the cake where it belong.   Well I found that if you sprinkle the cake with powdered sugar first, the frosting will stay where you put it.  Just make sure the cake is completely cool before you start frosting it.    Also if you dip the spatula in hot water,  it will give the frosting a smooth look.
