Carolyn Shelton

Cookbook Author, Noted Chef, and Etiquette Consultant, Louisiana/Texas

Black History Maker - For many years, Carolyn Shelton has nourished young and old in more ways than one. Her life is a kind of gumbo, filled with a variety of ingredients that provides the perfect recipe for success.

Ms. Shelton was born in Louisiana and raised in Texas. She learned most of her culinary skills from her mother, Angelina Zeno and grandmothers, all of whom were Afro Creoles.

Over the years, she traveled as a flight attendant which afforded her opportunities to sample and enjoy cuisine in several countries including Sydney, Australia, Auckland, Hong Kong, New Zealand, Samoa, Fuji, The Micronesian Islands, and other exotic places to name a few.

This former flight attendant left her career and decided to pursue a new venture as an Entrepreneur/Etiquette Consultant, Restaurateur/Chef Consultant and Cookbook author. Since then, she has also taught many young people how to cook.

As an advocate for youth at-risk, she teaches many programs using etiquette & manners as the focus to build Self Esteem. She recently developed the Young, Gifted & Classy Kids in the Kitchen -Cooking and Manners.

Shelton has authored several books including the following Coffee, Tea or Watermelon, Young, Gifted & Classy, and From Chitlins to Caviar. Shelton has also hosted the cooking shows, The Zydeco Café on the radio and appeared as a guest on television programs such as BET, CNN, Donahue, Essence Television, 60 Minutes, and WDSU.

Shelton has presently teamed up with major corporations including Boos Cutting Board, Borders, Hamilton Beach, Hebert’s Specialty Meats, Emile Henry, Kitchen Aid, Louisiana Fish Fry, Magnolias & Memories, Starbucks Coffee, Tabasco, and Whole Food Market, to name a few. Many of these partners have also participated in her cooking shows, videos and CDs.

Her latest project includes, Angelina's Zydeco Okra Cookbook. More than a cookbook, it offers cooking tips that will assist you in preparing wonderful Creole Cajun Foods.

Ms. Shelton sent me her famous Crawfish Fettuccini Recipe. It's a wonderful recipe. See below:


Angelina’s Crawfish Fettuccini

This Crawfish dish is one of my mother’s favorite and is requested frequently for Family gathering and catering events… What makes this dish different is the No Yolk wide noodles, and Louisiana‘s Crawfish.

The “Carnation Milk” gives it an added Richness, the Velveeta cheese and of course the Creole Seasonings. This dish can also be made with Shrimp or Chicken.

“Wow” Your friends and family I assure you they will be Requesting it often.

1 ½ cups butter
1cup chopped onions
1 chopped bell peppers
2 cloves garlic/ chopped
1 bunch green onions
!/2 cup parsley
2 pounds “Louisiana” Crawfish
1 Quart Half and Half cream
1 can carnation milk
1 pound Velveeta cheese
2 chopped jalapenos (Optional)
Salt and Pepper
2 tablespoons Creole Seasoning
1 ½ bag Egg less” No Yolk’ wide noodle pasta

Sauté onions and bell peppers in butter for 5 minutes
Add Flour and make sort of “Blond” Roux
Add Garlic/green onions and Jalapeños peppers/stir for 3 minutes
Add Cream and cheese let melt/ add seasonings/Stir for about 20 minutes

Cook noodles in Pyrex or casserole dish
Pour Chess sauce on top of noodles /take 4 chunks of cheese and place throughout the dish.
Place shredded chess on top and carnation milk
Bake in oven at 350 for 20 minutes.
