Spring is here and it’s a great time to celebrate with a delicious fresh salad. This spinach and egg salad is so easy to make and goes well with chicken, beef, or seafood.

Fresh Spinach and Egg Salad

FRESH SPINACH AND EGG SALAD
4 eggs, boiled and chopped
1 bunch fresh spinach - torn, washed and dried
12 fresh mushrooms, sliced
1 medium onion, thinly sliced
4 red tomatoes, chopped
Sea salt to taste
1/3 cup olive oil
1/8 cup rice wine vinegar

In a medium bowl, combine the spinach, mushrooms, onion, chopped eggs, and tomatoes; toss together and sprinkle with salt. Set aside.

In a separate bowl, whisk the oil and vinegar together. Pour over salad and toss to coat. Yield: 4 servings.
